Today was a triumph for me, I baked something, and it actually came out great!  I’m not completely horrible at cooking I just don’t do it often.  Baking is an entirely different story.

I’ve only made one successful batch of brownies in my life and all attempts before that were epic fails.  Let me take you back to Greensboro, circa 2010.  My roommate delegated me with the task of making brownies.  I swear fo Gawd that I followed the instructions to the tee but for some reason instead of making brownies I made something more akin to a brownie soup.  The worst part of it all is that I promised my crush I would save him some and bring them to campus the next day.  I could have put my brownie soup in a bottle and handed him a straw but instead I went to Starbucks and bought a brownie.  I don’t remember why but for some reason I never got to give it to him and ended up eating it. *Kanye shrug* My second attempt didn’t end any better.  That time I created a brownie cake.  I immediately retired from the baking business after that.

Fast forward to the year of our Lord, 2015 when I finally made a successful batch of brownies!  But brownies are simple and they come out of a box.  To really prove that I’m a competent baker I knew I needed more of a challenge and peach cobbler is what I chose.  One day I just started craving peach cobbler and rather than go to Hardee’s and buy some I decided I would save my money and make it!  (Because as we all know, I’m cheap.)  I looked for recipes on Pinterest and after I found one that sounded simple enough for my novice baking skills the planning began!  By planning I mean I contemplated buying the supplies but did not get around to it until many weeks later.

It just so happens that the day I finally decided to make my peach cobbler was Father’s Day.  I was surprised to find out that the majority of the ingredients I needed were already in the kitchen, I just had to buy the peaches.  The recipe I used called for Bisquick but I used Jiffy Mix because it’s what I had and I’m real like that.  Just between you and I there wasn’t enough Jiffy Mix to fill up a cup so I used pancake mix to cover the remaining 3/4’s or so.  (It’s self rising so it’s all good.)  After a little mixing, stirring, and pouring, my creation was ready to go into the oven, after I sprinkled some cinnamon on it of course.
